1 (5 oz) pkg baby spring mix
2 avocados, sliced
8 oz asparagus spears, blanched
1 cup rainbow carrots, thinly sliced
4 radishes, thinly sliced
2 mini cucumbers, thinly sliced
2 beet pickled eggs, sliced
1/2 cup grape tomatoes, halved
1/2 cup fresh mozzarella pearls
1/2 cup blueberries
4 Tbs sliced almonds
1 cup raspberries, mashed
1/2 cup white balsamic vinegar
4 tsp honey
2 tsp Dijon mustard
1/2 tsp salt
1/4 tsp black pepper
1 cup extra virgin olive oil
Directions
  1. In a large bowl, add the spring mix. Top with the remaining salad ingredients. Refrigerate until ready to serve. Add all of the vinaigrette ingredients to a jar. Shake to combine. When ready to serve, drizzle a few tablespoons over the salad. Serve the remaining dressing on the side.
